Behind books are not a character flaw. In a busy café, customer service, staffing, purchasing and emergencies naturally take the visible priority. The solution is to rebuild the records in a clear order rather than trying to fix random transactions whenever time appears.

Confirm every bank, credit-card, loan and processor account in scope.
Gather monthly statements and POS reports for the missing period.
Separate business activity from owner contributions and distributions.
Reconcile accounts month by month instead of categorizing the entire year blindly.
Review sales, payroll, liabilities, loans and unusual balances.
Produce financial statements only after the underlying accounts are reconciled.
